The oldest vineyard at Herdade do Rocim has always been affectionately called “Olho de Mocho” (Owl's Eye), because of the abundance of this spontaneous flower, whose scientific name is Tolpis barbata. Being special, it could only give rise to a unique and authentic wine that we now call “Olho de Mocho Single Vineyard”. Winemaking: Manual harvesting in 12 kg boxes. After passing through the cold room, the grapes were carefully sorted on a sorting mat, followed by total destemming and very light crushing of the berries. Fermentation took place in cement vats at a controlled temperature for 11 days. Ageing in 500 L French oak barrels for 16 months.
